Sous Chef – Sortino’s Italian Kitchen

Kalahari Resorts & Conventions is seeking a Sous Chef, Sortino’s Italian Kitchen. We are seeking an elevated chef at the top of their game.  Sortino’s Italian Kitchen is a new-age red sauce restaurant where old-school Italian cuisine meets the modern age. Sortino’s Italian Kitchen is a casual restaurant and bar that brings to Round Rock a tradition of hospitality established by Giorgio and Giacomo Sortino more than 60 years ago when they opened the original Sortino’s Little Italy restaurant in Sandusky, Ohio.

Key Responsibilities

  • Assist the Chef with the day-to-day operations of a busy, resort-based Italian kitchen, such as preparation, service, and closing.
  • Lead and assist culinary staff members in providing a genuine Italian dining experience, including overseeing the pizzeria station.
  • Ensure consistent quality, flavor, and presentation in all culinary offerings, from the main dining room to take-out.
  • Monitor food cost controls, portioning, prep par levels, and trash management to improve operational efficiency.
  • Conduct daily line inspections to ensure that all cooking stations are fully supplied, organized, and ready for efficient service.
  • Maintain the highest levels of food safety and cleanliness, including proper product rotation (FIFO), labeling, and storage procedures.

What We’re Looking For 

  • We require a background of three years of progressive culinary experience and three years of management experience.
  • Strong background in Italian cuisine and pizza operations preferred.
  • Basic knowledge of P&L, labor control, & food cost/recipe costing.
  • Proven ability to maintain composure and efficiency in a fast-paced environment.
  • ServeSafe certification or equivalent (preferred).
  • Passion for food, hospitality, and culinary excellence.
